Baked Sweet Potatoes with Smoked Paprika
Uniform size is important so that all of the fries cook equally

Crispy, baked sweet potato fries with smoked paprika may be your new go to when craving french fries.  Sweet potatoes are a nutrition powerhouse, packing Vitamin A and C along with smaller amounts of other vitamins and minerals.  They also are a great source of fiber and have a lower glycemic index than white potatoes.   Foods with a low glycemic index (GI) tend to release glucose slowly and steadily into the blood sugar as opposed to foods with a high glycemic index which release glucose rapidly……this means you can eat these sweet potato fries without feeling hungry or tired an hour later.  Have at it!!

I love the smokey flavor of the smoked paprika, not to mention the little specks of beautiful red color it adds, but if this is not your thing, feel free to season these fries with salt and pepper alone or add some curry, cayenne or cumin in place of the paprika.

Place the sweet potato fries on a lined sheet tray and remove from oven to flip halfway through

2 medium sweet potatoes, peeled and cut into ¼ “ sticks

1 T evoo

½ tsp smoked paprika

Salt and freshly ground pepper


Preheat oven to 400 degrees.  Toss the potatoes with the evoo, smoked paprika and a pinch of salt and freshly ground pepper.  Place on sheet tray lined with parchment paper and bake for 24-26 minutes, flipping fries over halfway through cooking.  Enjoy!!
