Hey, my name is Emily. I am a wife, a mother, a proud MN native, a recipe-developer, a registered dietitian and a lover of all things FOOD. Hot date night started 6 years ago after we had our 3rd child and finally grasped the new reality of NO FREE TIME. Tim and I decided we would block out Friday nights on our calendar for each other. I would cook, he would get the wine and with that HOT DATE DINNER was born. All recipes on this blog, have been developed by me (unless otherwise noted). It has been a great way to unwind and kick off the weekend after a hectic week. With minor modifications, we have kept the tradition alive. Hot date dinner now happens any night of the week and in any location we may be. “Can we have hot date?” is a common question in our house as the kids have come to love these nights as well. Hot date dinner has allowed so much creativity to flow here and I want to share and encourage you all to take the time to, “slow down, cook and enjoy a meal with the one(s) you love.”

I grew up in central MN, got my BS in Food Science, Nutrition and Dietetics from The College of St. Scholastica in Duluth, MN. I met and married Tim in Duluth and we then moved to Colorado Springs where I did my dietetic internship at Penrose Hospital. I have worked in long-term and sub-acute care, but have been home since my oldest was born in 2004. I am the proud mom to Danny, Katie and Thomas. We currently live in a south suburb of Minneapolis-St. Paul. As a family we enjoy traveling, we LOVE camping, hiking, fishing and all that the great outdoors has to offer. Cooking has been and continues to be a highlight in all aspects of this journey.
